Eggplant with Vegetarian Kung Pao Sauce

INGREDIENTS
- Eggplant
- Frozen mix vegetables
- Starch (optional)
- Seow's Kung Pao Sauce
INSTRUCTIONS

Deep fry eggplant, then set aside.

In a preheated pan, combine the frozen mix vegetables and fried eggplant.

With everything in the pan, add in Seow's Kung Pao sauce and stir till the sauce is heated (if you like your dish saucier you can add more of the Seow's Kung Pao sauce, and less if you like it drier).

Optional step to make this dish less watery. Mix well 1 teaspoon of starch with 1/2 cup of water. Then mix accordingly into the dish and stir till ready.
